Open-faced hummus sandwiches

I discovered this next recipe while waiting in the supermarket checkout line. I was skimming through a Cooking Light magazine and read olives, hummus, and goat cheese and I knew this recipe was for me.

I’ve made this sandwich for lunch and for dinner with a glass of white wine. It’s delicious no matter what time of day.

To make it you will need the following: DSC04917

4 slices of sourdough bread
1 and 1/2 cups of grape tomatoes halved
1/3 cup of chopped green onions
1/4 cup of pitted kalamata olives
1 TBS of olive oil
kosher salt and black pepper to taste
1 garlic clove minced
1 8 oz. container of hummus
1/2 cup of goat cheese
*** I also added green olives, which the recipe didn’t call for. But I love olives so if you are a big fan too, I suggest you add your favorites in addition to what’s listed.

Now let’s get down to business

First, preheat the broiler on low.
Then arrange the bread on a baking sheet and broil for about one minute on each side until the bread is lightly crisp and golden.


Combine tomatoes and the next 6 ingredients (through garlic) in a bowl.DSC04920

Spread hummus on each slice of bread and top them with the mixture, then add goat cheese.
