This next dish is so fresh and light. I like to pack it for lunch in the office or serve it for my girlfriends with a nice glass of wine.
To make this delicious treat you will need the following ingredients:
- 2-3 beefsteak tomatoes
- 2 eggs
- breadcrumbs
- cooking oil
- fresh mozzarella
- spinach or basil
Step One
Clean and slice tomatoes about 1/4th inch thick and set aside on a plate.
Step two
Pour breadcrumbs out on a plate
Step three
Crack 1 egg in a bowl and whisk (save the other egg in case you need more)
Step four
Take tomato slice and dip in egg then cover each side in bread crumbs
*I repeat this step to double bread my tomatoes- this makes the breading more crisp
Step five
Place tomato slices in batches in oiled skillet. cook each side until golden brown
Step 6
Plate tomatoes, add mozzarella cheese, spinach (or basil) and drizzle balsamic vinegar on top.
