A Spin on Chicken Parmigiana 

A little twist to a classic Chicken Parmigiana, I added fresh veggies to kick it up for spring. To make this dish you will need the following ingredients.

  • 4  thin cut chicken breasts
  • 2 eggs
  • Breadcrumbs
  • Medium bowl of fresh spinach
  • Jar of roasted red peppers
  • Cooking oil
  • Marinara
  • 1/4 pound of mozzarella cheese


  1. Bread chicken by dipping bread into egg and coating with bread crumbs. I repeat this step to make my chicken extra crispy.* Tip add Parmesan cheese to bread crumbs for extra flavor 🙂



2. Brown chicken on both sides in a lightly oiled skillet on medium

3. While chicken is cooking heat up marinara sauce in a pot

4. Once the chicken is cooked remove from skillet and set aside

5. Sauté spinach and roasted red peppers in skillet


6. Top chickens with sautéed veggies and wrap in mozzarella cheese

7. Return everything to skillet and drizzle marinara on top. Simmer until cheese is melted

Serve with fresh salad and enjoy!
