No matter how hard I try, I’m always rushing out the door for work in the morning. Even when I’m on top of my game, waking up early to make my bed or workout, somehow time still gets away from me. And of course, there are the days when I can’t get enough of that snooze button. Either way, I typically don’t have time to eat breakfast before work.
So, I bring make-ahead breakfasts. Here are some of my favorites.
This recipe is super easy. Add eggs, your favorite breakfast meat, and veggies to a muffin tray, and you’re good to go! Simply warm up when you get to work and enjoy! I like to add cheese and everything bagel seasoning to mine when I warm them up too. Full recipe here: https://bit.ly/2Kmph6g.
Kodiak Cakes Protein Muffins
You can find this recipe on the side of any Kodiak Cakes mix box. I find in the morning I often have a sweet tooth. These satisfy my cravings and provide a good source of protein to help keep me full throughout the morning. I also can eat this cold, so it’s one less step to do at work.
Granola and Yogurt
This is relatively new for me and took me a while to get used to, but I wanted a change from my typical go-tos listed above. So I bought a big tub of Oikos Greek vanilla yogurt, cut up some banana, granola, and topped it off with a little bit of honey. This is by far the easiest because you don’t have to cook anything. The Oikos has a lot of protein in it, and this kept me full, sometimes I even struggle to eat it all!
