If you know me then you know I love my Crock-Pot. It makes making meals so easy. I mean what is better than throwing a bunch of ingredients in the crock-pot, turning it on and coming home to dinner ready to eat?
This next recipe is one of my favorites to make in the Crock-Pot. It’s so hearty and delicious. This meal is perfect for fall.
Here’s what you’ll need:
8 chicken thighs
16 oz. of red potatoes, halved
16 oz. of baby carrots
16 oz. of green beans, trimmed
2 tbs of parsley
For the sauce
½ cup of reduced sodium soy sauce
½ cup of honey
¼ cup of ketchup
2 cloves of minced garlic
½ tsp. of dried oregano
1 tsp. of dried basil
¼ tsp. of red pepper flakes
¼ tsp. of black pepper
In a large bowl, mix the ingredients listed for the sauce.
Place chicken, carrots, potatoes and green beans into the Crock-Pot and pour sauce over.
Cook on low for 8 hours or on high for 4 hours.
I like to enjoy this meal in a big bowl while sitting on the couch watching some football.

That’s it! I’m making this next weekend!! (I’m away this week!) I LOVE chicken thighs. I had them plain last night, with roasted veg. As another blogger pointed out, it’s Autumn and the slow cooker comes out now, this dish sounds fab for cosy nights and I love a hearty meal whilst watching footie too!! Less I’m at the match!
