This chicken salad is perfect for spring and summer. It’s so light and fresh. The simple ingredients and easy recipe make it a great staple for barbecues and other outdoor get-togethers.
Here’s what you’ll need:
2-3 Chicken breast
1/4th cup of crumbled walnut
1/4th cup Craisins
Small purple onion
Place chicken breast in a large skillet and cover with water. Boil chicken until white and tender.
Let chicken cool and Chop celery and onion into small chunks and set aside
In a large bowl add shredded chicken, chopped celery, and onion, craisins, walnuts and mayo. Stir together until well coated.
Serve this chicken salad on top of greens, bread or crackers and enjoy.
