I recently found myself in a bit of a dilemma, I could not figure out what to pack my boyfriend for lunch. He doesn’t have a place to warm up food because his job is on the road. I, on the other hand, work in an office where I can bring whatever I want. Usually, I bring some kind of veggie, with ground turkey, and rice.
Still, when it came to his lunch, I couldn’t figure out what to make. We tried sandwiches, but he would often come home with them uneaten. I remember eating the same sandwich all week in high school, and it got boring quick, so I totally get it! Other weeks, we would waste the lunchmeat, and I would feel guilty because lunch meat can be expensive!
Any-who after some more trial and error packing his lunches, it finally hit me, pasta salad! There are so many variations, and you can pretty much put whatever you want in your pasta salad. I liked that he could eat it cold and that it would hopefully keep him full for throughout the day.
Now here comes my next dilemma, as I was researching some recipes for inspiration, I realized there wasn’t a recipe out there for a spicy pasta salad. My boyfriend loves spicy food, so I knew I had to make this pasta salad with some kick!

Here’s what you’ll need: (P.S. I bought all of my ingredients from Aldi, incase you’re were wondering)
- 1 box of farfalle pasta
- One green pepper
- One red pepper
- Package of dry spicy salami
- 1 can of black olives
- 1 cup of Italian dressing
- 1 cup of jalapeños – I used a jar of sliced jalapeños
- ½ cup of jalapeño stuffed olives or olives of your choice
- *You could also add onion to this or any other veggies of your choice. I think a purple onion would be delicious in this!
Making this pasta salad is simple, cook your pasta according to the package, chop up your veggies and salami, and mix together with your cup of Italian dressing.

Mmm I love pasta salad! I just packed a cold quinoa & chicken salad for lunch the other day & it held up nicely through the day. Maybe you could try it for his next lunch! 🙂
