Taco Bowl Meal Prep

I started meal prepping a few years ago to save money and be healthier. Each Sunday I plan my meals out for the week, I write my grocery list, and I purchase the ingredients needed to make my meals.  When I have the time, I will prep my breakfasts, lunches and some dinners in one day.

Lately, I have been a little rushed, so I have been focusing more on lunches. My favorite lunch to meal prep is a taco bowl. It has a few ingredients and takes no time at all, I will make a few containers of this for my boyfriend and I, then we will take leftovers from our dinners the rest of the week.

We haven’t gotten sick of it yet, which happens sometimes when you’re eating the same meal day in and day out.

Ingredients:

1 pound of ground turkey – You can also use ground beef or ground turkey
1-2 red bell peppers or the color of your choice. I used orange here
1 yellow onion
1 can of corn
1 bag of minute rice
Reduced sodium taco seasoning or you can make your own taco seasoning with chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper
**Feel free to add in more veggies! 

Cook your rice according the package.
Cook your ground turkey in a pan on high until it’s browned. Once it is browned I pour about half a cup of water in with my taco seasoning and reduce the heat to low simmer. Toss your ground turkey in the with seasoning until it is well coated.
In another pan, saute your corn, onion and peppers with a little bit of olive oil and salt.

Once everything is cooked, put it together in your containers. For portions, I usually do 1 cup veggies, ¼ cup of rice and ¾ cup of the meat.
