Crock-Pot Chicken Fajitas

Since moving into my new apartment, I’ve been doing a lot of Crock-Pot meals. Now that I am on my own, I love coming home to dinner already made even more. This next recipe was the first dinner I made in my new place!

I love how simple this recipe is. As you know, I’ve been working hard to budget and save. So far, I’ve tried to make meals that are inexpensive without sacrificing flavor. This meal checks both of those boxes and there were plenty of leftovers, giving me more bang for my buck!

Let’s get into the recipe. Here’s what you’ll need:

1 pound of chicken breast
1 packet of fajita mix
3 bell peppers – colors of your choosing.
1 yellow onion

Slice your peppers and onions into small, thin strips. Place them at the bottom of your Crock-Pot.IMG_0993

Line your chicken breast on top of the peppers and sprinkle the fajita mix on top.

Cook on low for 6-8 hours.

After the 6-8 hours shred your chicken using a fork and mix everything together.

Serve over rice or with tortillas and all the other fajita fixings 🙂
