Brussels sprouts with a twist

I got this next recipe from Chrissy Teigen’s book Cravings. Brussels sprouts are my favorite and writing this post has seriously got me craving to make this dish again. This classic roasted Brussels sprouts with a twist might be my new go-to way of making these crispy greens.

Here’s what you’ll need:
1 ½ pounds of Brussels sprouts, trimmed and halved
15 cloves of garlic, peeled
***I just used about a tablespoon of minced garlic
Salt and pepper
4 slices of bacon cooked and crumbled
***I used turkey bacon because I don’t eat red meat
½ cup of chopped toasted walnuts
¼ cup of dried cranberries
¼ cup of crumbled blue cheese

For honey balsamic glaze
1 cup of balsamic vinegar
½ cup of honey

Preheat oven to 450 degrees
In a large bowl toss Brussels sprouts in garlic, olive oil, salt, and pepper

Roast Brussels sprouts on a baking sheet as you normally would until they are brown and crispy, about 20 mins
In a small saucepan combine ingredients for sauce and bring to a boil. Reduce heat and simmer for 20 mins
Cook bacon and set aside
I couldn’t find toasted walnuts in the store so I toasted my own in the same pan I cooked my bacon in

Transfer Brussels sprouts to a platter, drizzle with glaze and top with bacon, walnuts, cranberries, and blue cheese.

    Mmm, wish this was a vegan recipe!

    Many shops DO sell vegan bacon, which I’m sure would work just as well, and I’m sure any vegan cheese (like White Cheddar Style Cheese by Cheezly sold in Holland & Barretts) grated on top would taste just as lovely as the blue cheese 🙂 Instead of honey, perhaps a syrup like maple, agave or golden syrup could be used – or one could be made using heating up some water with some sugar.

    I’ll definitely try making a vegan version of this!

    I don’t actually like them very much, but I think I would enjoy these. I think the problem is that a lot of us only know them served plain at Christmas, and that’s not very exciting! Thanks for sharing this option for mixing up the flavours a bit 🙂
