Facebook Foodies: Shrimp and Scallop Broil

I discovered this next recipe when my mom posted a Delish video to my Facebook wall. Later that week we ended up having a girls’ night with our neighbors. My best friend Tori and I sat by the pool all day and sipped on Tropical Sangria. Our moms joined us for dinner so we made this super quick and delicious shrimp and scallop recipe.
The dinner took little time to make and was gone in even less time because it was just so good. Of course, my friend and I doubled if not tripled the ingredients so, I will be sharing the original recipe.

Here’s what you’ll need:

1/4 cup butter cut into pieces
1/3 cup dry white wine
1 tablespoon fresh lemon juice
1 tablespoon Worcestershire sauce
3 garlic cloves
crushed red pepper
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound large peeled and de-veined shrimp
1 pound sea scallops (slice in half if more than 1 inch thick)
1-pint cherry tomatoes halved
5 ounces baby spinach leaves

**We used frozen shrimp and scallops because it was a little bit less expensive. We also used minced garlic because that is what we had on hand.

Now, preheat your oven to broil and slice butter into roasting pan.
Broil until butter is melted.
Remove from oven, pour white wine and add the next 6 ingredients to your pan.
Add shrimp, scallops, and tomatoes and toss to coat.

Broil for about 3 minutes
Turn scallops and shrimps then broil again for about 2 minutes.

Add spinach and return to oven to wilt about 1 minute.

Enjoy with a slice of warm French bread, wine, and good friends.

This recipe is seriously perfect to make for friends because it is so easy and takes no time at all. You’ll spend less time prepping the meal and more time enjoying your company.
