Taco Stuffed Peppers

This next recipe is probably one of my favorite things to eat. There are a couple of steps in making this dish but it is so worth it in end.

Here’s what you’ll need:
1 pound of ground turkey or beef depending on your preference
1 can of corn
1 can of diced tomatoes
1 can of black beans
1 onion
1 can of 8 oz. tomato sauce
1 pack of taco seasoning
1 cup of chicken broth
Pack of instant rice
6 bell peppers in the color of your choice
Cheese to your taste

Now, for the steps!
Preheat oven to 375 degrees
Cook the rice according to packaging and set aside
Drizzle sauté pan with olive oil and cook ground turkey on high until brown, break it up as it cooks
Drain grease and add onion and garlic onion until it begins to turn clear. Add taco seasoning and lower heat to medium.
Add in corn, diced tomatoes, black beans, tomato sauce, rice, and cheese. Simmer until cheese is melted.

Cut the top off of your peppers and set them in a baking dish
Stuff peppers with your mixture and place back in the dish

Pour about an inch of the chicken broth in between the stuffed peppers
Cover dish with foil and bake in the oven for 25-30 minutes
Remove foil, top peppers with more cheese and bake for another 5 minutes

 

Serve with your favorite toppings like sour cream or salsa and enjoy!
